The Cookie & Crumb is popping up in the taproom for another Brewery Series sourdough loaves made with “What’s The Big Dill” Dill Pickle Gose, bringing subtle tartness and complex flavor to every bite. Combined with carefully selected ingredients and long fermentation, these specialty loaves celebrate the best of both craft brewing and artisan baking. This week’s flavor are:

• Fresh dill and roasted garlic

• Dill pickles, fresh dill and cheddar

The Cookie & Crumb bakery is also teaming up with Toasted Traveler food truck on a special sandwich using these sliced dill gose sourdough bread. Meet “The Dilled Grilled Cheese" with a mix of cheddar and mozzarella cheese with spicy dill pickle chips served with ranch on the side.

Join us Saturday, June 6th in the Ballroom for a celebration of local country music. Talented songwriters from Northeast Ohio and Western Pennsylvania are coming together in the Ballroom for the 4th Annual Cowtown in the Round event, performing all original songs. This event is FREE - no cover charge.

The format of a “round” has three songwriters on stage. One performs a song, followed by the next writer, and the next, and so on. Each songwriter can join in with the others, add harmonies, contribute a guitar riff, or just listen. Writers talk about how and why they wrote the songs, and there are always lively stories and interaction between the writers, and audience.

Singer/Songwriter Bios:

• Molly Maltempi is a singer-songwriter originally from Ohio. She is currently a freshman at Belmont University studying Commercial Music and Songwriting in Nashville, Tennessee.

• Dave Smith is a singer songwriter from the band Okie Ross. He grew up loving John Prine and Guy Clark. He never liked the devils music or recreational drugs. But he does like writing songs about these things and many others.

• Cora Reef is an energetic singer-songwriter and guitarist who is proud to continue the tradition of Midwest emo music with a touch of country flair. Her single "Wayward, Prodigal" gained popularity on TikTok, leading to covers and other fan works. When she is not on stage, Cora is teaching voice lessons or exploring Ohio's parks. You can follow her work on instagram @corareefmusic, Facebook @Cora Reef, and TikTok @corareef.

• Ryan Blakeman is a Singer-Songwriter based in Youngstown, OH. Ryan plays a smooth blend of Americana, Folk, Southern Jam, Blues, Classic Country, and Pop influences that is best described as "Whiskey Rock"

• Americana singer-songwriter from Northeastern Ohio, Leo D’Angelo’s music is steeped in elements of blues, folk and rock.

• Taylor Borton is a Nashville-based singer-songwriter blending Country, Americana, and contemporary influences into a distinctive, story-driven style rooted in real-life experiences. She has written with multiple #1 songwriters and earned an honorable mention in American Songwriter for “Honky Tonk Hair,” co-written with Bill DiLuigi and Mary Zalla. In 2025, she sold out a ticketed acoustic showcase in her hometown of Youngstown, Ohio, and has been featured by outlets including WKBN, WKRN, and Today’s Country Magazine. Focused on her career in Nashville, Taylor is emerging as a compelling new voice in Country and Americana music.

• Carl Besece writes songs about a life in Appalachia and Alaska. Not just a songwriter but a Song Catcher.

“Out to Pasture”, a phrase used for generations in the Miller family to get the kids out in the fields to pick dandelions. Now a name for our Dandelion Hefeweizen, a collaboration beer we have brewed since 2016 with Farmboy Cattle of Columbiana, Ohio.

Join us in the taproom on Thursday, June 4th for the tapping and can release of this amazing seasonal beer. This 7bbl (217 gallon) batch was brewed with 25 pounds of dandelions picked by hand fresh from Farmboy Cattle fields by the “zoo crew”.

2026 Out to Pasture Dandelion Hefeweizen optional pint glass inclusive starting at 4 p.m. when we open the taproom doors. There are 100 glasses available. First come, first serve.

A portion of proceeds from the Dandelion Hefe beer sales and copper cup inclusive sales will be going to support the Columbiana County Jr. Fair Beef Club.

Most of our seeds come from Baker Creek Seeds, and we’re especially excited to share some fun varieties, including a little piece of Astrid’s Peruvian roots with plants like Aguaymantos.

We’ll have tomatoes, peppers, squash, cucumbers, herbs, flowers, and more!

Nardozzi's Nursery returns to the patio for their second annual plant pop-up sale on Saturday, May 16th from 1-5pm. This local nursery uses all organic principles to grow their seedlings, although not formally certified organic. Star Wars Day 2026 | May The 4th Be With You

Sup C3P-BRO!? Join us Monday, May 4th for Star Wars Day and the annual release of Space Candy, our 7.7% ABV Double IPA intensely dry hopped with Lotus, once known as X06297 experimental hop variety. This hazy, super juicy DIPA is blasted full of notes of pineapple and other citrus fruits with creamy tropical flavors that leave hints of mango and paw paw fruit.

“Beep, Bloop, Blop, Bleep, Boop.” Roughly translated… This is the beer you’re looking for. In addition to Space Candy, we’re releasing a NEW Small Batch Beer when we open at 4 p.m. — Introducing, “Droid Oil”, Black IPA brewed with Simcoe and double dry hopped with Amarillo and Citra hops.

The first 100 Space Candy or Droid Oil in-house pours will have the option for a ceramic BEER2 or K3G8 droid style cup/mug. These custom hand thrown commemorative and functional works of art were made locally by Raven Hanley Ceramics — Limit 1 per person.

DJ Aka is kicking off the party with some galactic beats starting at 4 p.m. De-Lisha’s, Auntie Anne’s & Totally 80’s Ice Cream will all be setup on the patio serving from 4-9 p.m.

Live music from The Modernes in the Ballroom from 6 to 8 p.m. The Modernes are an Americana, Roots and Surf Rock band from Akron, Ohio. They bring a high flying guitar forward act to the stage. Their sound has been described as a vigorous, vibrant form of amped-up Americana, which incorporates a host of different styles from surf and rockabilly to exuberant roots rock. It’s an intoxicating blend, which is as much fun for the listener as it sounds to be for the band.

Come dressed in your favorite Star Wars costume for a chance to win some great prizes. Darth Tanner, Jugolorian & Stormtrooper GS-066 will be organizing a costume contest this year in the Ballroom in between The Modernes sets. Join us at Beaver Creek State Park on Saturday, May 2nd for a Kayak Crawl fundraiser supporting the creation of an all-accessible playground in our beautiful local state park.

We’re partnering with Friends of Beaver Creek, a local 501(c)(3) nonprofit organization, who will be pulling the permit so we can serve beer in the park following your kayak ride down Beaver Creek.

Don’t have a kayak? No worries — kayaks and shuttle service are available and included with select tickets.

100% of the below kayak and guided hike ticket sales, along with beer sales will be donated directly to the Playground Project.

Ticket Options – All adult kayak and adult guided hike tickets include (2) 16 oz. pints of Birdfish beer (Must be 21 y/o with proof of valid ID upon request), brewed with Columbiana County grown Yarian Quality Malts. Birdfish Beer tent will be open from 1-5 PM in the park. Your “Buds” at Birdfish would like to share some plants with you! Birdfish Buds stand started last year at our 2025 Earth Day celebration and is still setup in the taproom. The stand holds plant propagation from some of our household plants. The goal of the Birdfish Buds plant stand is for anyone to bring in some of their own plant ‘babies’ and to share with others.  The Birdfish Buds stand will continue this year at Birdfish for you to bring in your propagated plants to share, as well as take a new bud home to love. 

Tansy Recycling is joining us this year on the patio (weather permitting) selling plant pots and other products made from recycled plastic. In case you didn’t know — we collect PakTech can holders right here in the taproom. Whatever we can’t clean and reuse gets sent to Tansy Recycling, where it’s turned into new products through a closed-loop recycling program. Come celebrate Earth Day as Jess from Nardozzi's Nursery brings a pop-up plant bar to Birdfish Brewing. Plant bar consists of: hand poured cement planter poured by Jess herself, succulent of choice, custom succulent soil, optional top dressing and adornments to make the creation your own. Fun activity for families and individuals of all ages!  (add about the special beer Earth Day beer, etc).

Two Crews. Eight Brews. Frenzy Friends Tap Takeover at The Draught House.

We’re kicking off Federal Frenzy the only way we know how—by taking over the taps at The Draught House, which is right in front of the Federal Frenzy MAIN STAGE!!

On Saturday, April 18th starting at 2PM, Birdfish Brewing Company and Noble Creature Wild Ales & Lagers are rolling into The Draught House with 8 beers total — four from each crew. See lineup below:

Expect a stacked lineup of fresh pours, brewery reps on site, and plenty of reasons to stay awhile. We’ll be hanging out, talking beer, and handing out some swag (stickers, sunglasses, keychains, and maybe even some shirts!) to anyone drinking along with us.

Noble Creature Lineup:

• “Conduit” Munich Dunkel 5.5%. Malt forward, with flavors and aromas of toffee, cocoa powder and toasted walnuts. A mildly sweet finish rounds out our dark German inspired lager.

• “11” English Pale Ale 4.5%. New collab with Craft Collective in Shaker Heights, OH. Brewed with Marris Otter and house English Ale yeast and hopped with Challenger & Bramling Cross.

• “Basement Darts” ESB 5.5%. A well balanced pub ale with a touch of nuttiness, floral & spicy hop character, and a bready malt sweetness

• “Jelly” Imperial Fruited Sour with Vanilla 7%. A pleasantly sweet & sour ale loaded with a silky amount of strawberry, raspberry, blackberry, and blueberry plus fresh vanilla bean.

Birdfish Lineup:

• “Wandering Kind” West Coast IPA brewed with Comet and Strata hops 6.5%

• “Hi-Quad Drifter” Black Currant Belgian Quadrupel aged 19 Months in a Red Wine Barrel 10.4%

Hey, careful man, there's a beverage here! “The Dude” White Russian Imperial Stout — our annual collaboration brew with Youngstown Coffee Company will be back in cans and on tap.

We’re stoked for you to see what we’ve been cooking up with Akron Glass Works for this year’s fest! Custom, hand-blown rocks glasses — Shaped by fire, finished by hand, each one sand carved with LeBREWski art, and no two exactly alike. Because, well… The Dude Abides. Limited quantity. Fest exclusive.

We partnered with Westside Bowl and Havana House to make this year’s festival even more righteous. And as always, our homies at RAT Creative will be dropping fresh festival swag.

Early tapping of “The Dude” & “Over the Lime!” happening Thursday, April 16th starting at 4 p.m. at Westside Bowl. They’re planning to kick the celebration off right with live music from Left Lane Cruiser, bowling, Lebowski inspired pizza, happy hour and more. This party at WSB will continue all weekend with more live music from Gentry Blue and Meat Dept. on 4/17, Ringleader and Second Site on 4/18, Geo & The Storm on 4/19. We’re donating $1 per per poured during the event to our Golden String Friends. Golden String will pass around an old Folger’s coffee can to support St. Jude’s Hospital in Tennessee. Golden String client, Susan Cramer, collects loose change for St. Jude’s. Susan, a friend with cerebral palsy, a woman with severe physical disabilities, rolls the change and sends it to Tennessee. Please bring your spare change to donate. We will clean off the lint.

• We’re stoked to welcome our friends from Canton Importing this year, who’ll be set up all afternoon for our Greek Independence Day celebration!

• Owners Justin & Maria and her family, who are proud of their Greek heritage, will be bringing a taste of the Mediterranean right to the brewery with a pop-up mini Greek market. Expect shelves stocked with imported olives, specialty cheeses and meats, fresh pastas, traditional Greek coffee, barrel-aged feta, and hard-to-find specialty Greek foods that you won’t see at your average grocery store.

Ethos - Live Music

• Live music in the Ballroom from 2-6 p.m. with Ethos, a Greek band based in Pittsburgh, Pennsylvania. Inspired by their shared Greek heritage and motivated to keep the Greek music tradition alive and thriving in the United States for future generations. Nick Riley (Bouzouki), William Gary (Keys/Vocals), and Spiros Kourouklis (Percussion) play a mix of traditional and popular Greek music. They use their passion for the Greek music tradition to help maintain and continue to build the Greek community in America by bringing people together as they celebrate their shared culture & heritage.
