Wooly Mammoth

Since the dawn of early man, the Wooly Mammoth had coexisted with humans, providing them with some of the necessities of life. Hunted for their meat and tusks, the Wooly Mammoth helped sustain mankind until its species extinction, some 12,000 years ago.

But the Wooly Mammoth never truly went away, instead lying in a dormant slumber beneath the frozen tundras of Eurasia, the sweeping hills, mountains and glaciers of North America, and the streets of Columbiana, Ohio. 

Now as Old Man Winter’s bitter chill continues to grasp at us, the Wooly Mammoth arises once again from its slumber, destined to walk the earth. Once again providing sustenance for the humans that inhabit our sleepy town.

The Wooly Mammoth began its ascent from extinction with a behemoth amount of malts and a four-hour boil, followed by a massive amount of maple syrup. After a relaxing 12 month rest in a maple bourbon barrel, it is finally ready for this giant to walk amongst man again. Perhaps it will put a little hair on your chest? 

Details from the Brew Crew:

 Brewing a barrel aged stout is a very time consuming brew day and requires a lot of patience…. And this need for patience continues with the aging process as well. With that being said, after brewing nonstop on a one barrel system for two years we were never really blessed with space for barrels or even time to age a beer that long. However, after ramping up production to a 7 BBL system at a new location we finally got a chance. So this was one of the last beers we brewed on our 1 BBL pilot system and transferred to our new location to go to sleep in a maple syrup bourbon barrel and it was worth the wait! This beer has a complex grain bill that brings through caramelized sugar and sweet chocolate notes, then boiled for four hours and finished with blackstrap molasses and brown sugar to give it a nice smooth full body.
